Spice It Up! African Peri Peri Chicken and Rice

Chicken and rice in a dutch oven is an easy, one-pot meal, and Spice It Up! African Peri Peri seasoning gives it the WOW! factor you are looking for. Spice It Up! African Peri Peri, with its mix of garlic, lemon and various peppers, is all you need to make a meal that will please anyone.  The heat is subtle, more tantalizing than burning, simply enhancing the chicken and the flavorful rice so that even the most delicate palate will enjoy this dish. Experiment with adding other vegetables, like zucchini and squash, for a true one-pot meal. If you don’t own a dutch oven, you can use a saute pan for the first few steps of the recipe, then transfer everything to a casserole dish before baking in the oven.

  • 2 lbs Chicken thighs
  • 2 tbls Spice It Up! African Peri Peri Seasoning
  • 1 tbls Lemon juice
  • 3 tbls olive oil
  • 3 cloves garlic minced
  • 1 medium Onion diced
  • 1 medium Red bell pepper diced
  • 1 1/2 cups Long grain rice
  • 14 oz can Diced tomatoes
  • 16 oz Chicken broth

  • 14 oz can Diced tomatoes

Instructions
  1. Combine Spice It Up! African Peri Peri seasoning with lemon juice and 1 tbls oil and use to marinate chicken for at least 8 hours, but no more than 24 hours. Preheat oven to 350 degrees. Using a dutch oven over medium high heat, add the remaining oil and brown the chicken thighs, approximately 3 minutes on each side. Remove from pot. Saute the garlic, onion and red pepper in the dutch oven, stirring often until onion is translucent, approximately 5 minutes. Add rice, broth and tomatoes and bring to a boil, stirring to incorporate. Add chicken back to pot. Cover and bake at 350° for 40 minutes, or until chicken is cooked through.
Recipe Notes

Add fresh herbs like thyme or parsley when serving.

If you don't own a dutch oven, use a saute pan on the stove top, then transfer to a casserole dish, cover and bake as directed
