Black Beans and Autumn Vegetables
Black beans and Spice It Up! Black River Creole Seasoning alone are a match made in heaven, so just imagine inviting autumn vegetables to the party! This seasoning blend is perfect with sweet potatoes and butternut squash because it’s salty spiciness pairs so well with their creamy sweet nature. Add more broth to turn this into black beans and autumn vegetable soup.

Ingredients
- 1 tbsp olive oil
- 2 cloves garlic chopped
- 1 medium Red Onion diced
- 1 Bell pepper red, green, or orange, diced
- 1 tbsp Spice It Up Black River Creole Seasoning
- 2 cans (14 oz) Black beans drained
- 1 can (14 oz Fire roasted tomatoes diced
- 5 cups Vegetable broth
- 2 cups Sweet potato and/or Butternut Squash peeled and cubed, approximately 1/2 inch pieces

Instructions
- Place oil in a large pot over medium heat. Add garlic and saute for 1 minute, then add onion and pepper , reserving about 2 tablespoons, and saute until onion is translucent (approximately 5 minutes), stirring occasionally. Add Spice It Up! Black River Creole Seasoning and all other ingredients and bring to a simmer. Continue to simmer, uncovered, for approximately 30 minutes, stirring occassionally, until vegetables are fork tender. Garnish with reserved onion and pepper.
Recipe Notes
Serve as a side dish or over rice for a main dish.
For more heat, add a diced jalapeño to the peppers.
For a non-vegetarian dish, you can easily saute sausage, such as chorizo, with the onions and peppers.
A dollop of sour cream would be divine!
