Bavarian Seasoning in Chicken and Sauerkraut Soup

Here’s a different take on chicken soup-sauerkraut! Spice It Up! Bavarian Seasoning is a wonderful blend of mustard seeds, bay leaf, thyme, and garlic with just a hint of mint that adds earthy goodness to this comfort food. By rinsing the sauerkraut before adding it, this soup is tangy and savory without being “sour”. Spice It Up! Bavarian Seasoning is what makes this soup so warm and satisfying. Be sure to have some rye or pumpernickel bread on hand-you won’t want to waste a drop of this soup!

Ingredients
  • 1 Carrot diced
  • 1 small Onion diced
  • 1/2 cup Mushrooms sliced
  • 2 tbls olive oil
  • 1 tbls Spice It Up! Bavarian Seasoning
  • 32 oz Chicken broth
  • 3 medium potatoes diced
  • 2 cups Chicken cooked and diced
  • 1 14 oz can Sauerkraut drained and rinsed
  • Sour cream

Chicken and Sauerkraut Soup
Instructions
  1. Add oil, carrot, onion, and mushrooms to stock pot and saute over medium heat for 3-4 minutes. Add Spice It Up! Bavarian Seasoning and continue to saute for 2 more minutes. Add chicken broth and sauerkraut that has been drained and rinsed, and bring to a boil. Lower heat and cover, simmering for 30 minutes. Add potatoes, recover, and continue to simmer for 20 more minutes, or until potatoes are soft. Add chicken and let sit for 5 minutes to warm the chicken. When serving, add a dollop of sour cream to each bowl and stir to incorporate.
Recipe Notes

For a more sour taste, drain the sauerkraut but do not rinse.

Can easily be made using vegetable broth and "chicken" substitute for a vegetarian meal.

Spice It Up! Bavarian Seasoning is also amazing on Roasted Potatoes.
