Add oil, carrot, onion, and mushrooms to stock pot and saute over medium heat for 3-4 minutes. Add Spice It Up! Bavarian Seasoning and continue to saute for 2 more minutes. Add chicken broth and sauerkraut that has been drained and rinsed, and bring to a boil. Lower heat and cover, simmering for 30 minutes. Add potatoes, recover, and continue to simmer for 20 more minutes, or until potatoes are soft. Add chicken and let sit for 5 minutes to warm the chicken. When serving, add a dollop of sour cream to each bowl and stir to incorporate.
