  • 4-5 medium Sweet Potatoes Peeled
  • 3 Tbls olive oil
  • 1 Tbls Spice It Up! Cuban Island Spice

Instructions
  1. Preheat oven to 425 degrees. Cut sweet potatoes into 1/2 inch wide wedges. Toss with olive oil. Sprinkle on the Spice It Up! Cuban Island Spice and toss to coat. Place on baking sheet in single layer, being sure not to crowd fries. Bake for 15 minutes, then turn and continue to bake for an additional 5-10 minutes. Fries should be slightly crisp, but not burnt.
Recipe Notes

For more fiber, don't peel the potatoes-it is delicious with the skins on.

Serve with dipping sauce such as ketchup or steak sauce.

Add the leftovers to black bean burritos.

Spice It Up! Cuban Island Spice can be used on black beans or chicken for a tropical touch.
